Watermelon Feta & Red Onion Salad

Ingredients

  • 6 cups approx. cubed watermelon
  • 2 cucumbers chopped
  • 1/2 - 3/4 of a red onion, sliced
  • 1 block of cubed sheep feta cheese
  • sliced basil and/or mint
  • 3 TBSP Organic Extra Virgin Olive Oil
  • 1 TBSP Balsamic Vinegar
  • 2 tsp honey
  • 1/2 tsp approx. fresh ground black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp approx salt

Instructions

In measuring cup whisk together vinegar, honey, salt, pepper, and garlic powder. Whisk in olive oil. Add the cucumbers and red onion and let it marinate while you prepare the watermelon.

Cube the watermelon and place it in a large bowl. Pour the cucumber, onion, and dressing over the top of the watermelon. Gently combine.

Add the cubed feta and basil and gently fold in.

Refrigerate for about a half hour. Top with a garnish of basil or mint before serving.
