Ingredients
- 1 lb pasta such as penne, rotini, fusilli, or rigatoni
- 1-1/2 cups ricotta cheese
- 1 cup grated pecorino or parmesan
- Zest of 1 large lemon, grated
- Juice of that lemon
- Salt & Pepper
- 1/2 cup loosely packed basil leaves, sliced
- pinch of red pepper flakes
Instructions
Bring a large pot of salted water to a boil. Add pasta and cook al dente.
Place the ricotta, cheese, lemon zest and juice, salt, and pepper to a pot with a handle that will fit over the boiling pasta.
When there are about 2 minutes of cooking time remaining on the pasta place the pot over the boiling pasta and stir the ricotta mixture until it warms and loosens.\
When the pasta is done, drain it. Add it to the bowl or pot of ricotta and mix well. Add basil and red pepper flakes.
