Ingredients
- 1 butternut squash
- Butter
- Pure maple syrup
- Cinnamon
- Nutmeg
- Opt. Pecans roasted or raw
Instructions
Preheat oven to 350 degrees F.
Make a few slits into the squash with a knife to prevent it from exploding. Roast the squash for approximately 1 hour.
Cut the squash half and scoop out the seeds. Mash the pulp with a little butter and maple syrup, sprinkle with cinnamon, and nutmeg. Top with pecans.
This makes a high fiber, nutrient dense, easy to prepare side dish. While you have the time in roasting, aside from that there is very little prep time.
