Ingredients
- 3-4 cloves garlic, smashed
- 1/2 cup parsley leaves
- 1/2 cup cilantro leaves
- 1/2 cup mint leaves (I used 1/4 cup each spearmint and peppermint) )
- 1 TBSP thyme leaves
- Juice of one lemon
- Lemon zest
- 1/2 cup asaiago cheese
- Salt to taste ~1/2 tsp
- 1 cup sesame seeds
- 1 cup extra virgin olive oil
Instructions
Combine the herbs, garlic, lemon juice, zest, asiago, and salt in a food processor. Pulse a few times and chop the herbs. Add in sesame seeds and process again, pouring in the olive oil while the sesame seeds are being processed.
This is great over pasta. Also good as a pupu (appetizer) spread on cucumbers and topped with a black olive.
Notes:
My daughter wanted my pesto but I had no basil and not enough cilantro … so took a walk through my garden … and I was able to a make pesto — and good one at that! Herbs can be so versatile.
