Collards with Mashed Potatoes

Ingredients

  • large onion
  • 2-3 cloves garlic, minced
  • Butter
  • Collard greens
  • Salt and pepper
  • Mashed potatoes

Instructions

Make mashed potatoes to your liking – I like mashed potatoes with the skin.

Sauté onion and garlic in butter. Add salt and pepper. Remove the rib from the collard leaves by folding the leaf and slicing with a knife along the rib and then rolling the leaf and slicing finely. Add to onion and garlic. Cook over high heat about 10 minutes.  Add1/2 cup of potato water (or plain water if you did not save your potato water) and steam another 10 minutes.

Serve over mashed potatoes.
