Dandelion Pesto

Ingredients

  • 2 cups Dandelion leaves, chopped and loosely packed
  • 3-5 cloves of garlic
  • 1/2 cup pine nuts, toasted
  • 1 TBSP lemon juice
  • 1 TBSP lemon zest
  • 1 tsp turmeric powder
  • 1/4-1/2 tsp salt and freshly ground black pepper to taste
  • 1/4 cup grated pecorino cheese
  • 1/4 to 1/2 cup organic extra virgin olive oil

Instructions

Add all ingredients to blender and blend til smooth. If it’s too thick add more lemon juice and/or olive oil.
