Ingredients

  • Fresh or Frozen Edamame
  • Salt - finely ground and flake salt

Instructions

Put about 4 TBSP finely ground salt in a quart of water and bring to boil.

While the water boils, rinse your edamame and place them in a bowl, sprinkle with 1 TBSP salt and rub the salted pods against each other with your hands to remove the fuzz. Do not rinse off.

Add the salted pods to the pot of salted boiling water; boil for 3-1/2 minutes.

Drain in a colander, do not rinse. Transfer to a bowl sprinkle with flake salt and let cool for about an hour. Caution –if you do not cool them you could burn your lips on trapped steam inside the pods.

If using frozen edamame, check to see if they were frozen raw or cooked. If frozen raw you can move directly to the boiling in salted water step, boiling them for 4-5 minutes and finish as the fresh recipe.
