Fish Tacos

Ingredients

  • 1 Flour tortilla or 4-5 Corn Tortillas
  • 1 lb. white fish like ono or mahi mahi
  • 1/2 tsp ground cumin
  • 1/4 tsp or more cayenne
  • 1 tsp salt
  • few grinds black peppercorns
  • 1 TBSP olive oil
  • 1 TBSP butter
  • Fish Taco Toppings
  • 1/4-1/2 small purple cabbage
  • 1 avocado
  • 1/2 diced red onion
  • 1/2 bunch cilantro stems removed and chopped
  • 1 lime cut into wedges
  • For the Fish Taco Sauce
  • 1/2 cup sour cream
  • 2 TBSP lemon or lime juice
  • 1 tsp garlic powder
  • opt. Sriracha sauce to taste

Instructions

I prefer to use a flour tortilla over corn tortillas, this recipe will work for either.

Combine seasonings in a small bowl and sprinkle over both sides of the fish. Lightly drizzle fish with olive oil (or coconut oil) and small pat of butter. Bake bake at 375o until done — or you can cook fish in a skillet as well.

While fish cooks cut or slice taco toppings. If using corn tortillas toast them lightly.

Combine all taco sauce ingredients and whisk until well blended.

Place your toppings down the middle of tortilla, top with fish, drizzle with sauce. Optionally you could sprinkle in a little cotija cheese before rolling up. Serve with lime wedges to squeeze over tacos.

Roll up and enjoy.
