Gazpacho

Ingredients

  • 4 cups of organic tomato juice
  • 1/2 cup onion, finely minced
  • 1 medium clove garlic, minced (I use more)
  • 1 medium bell pepper, minced
  • 1 tsp of honey (optional)
  • 1 medium cucumber, peeled, seeded and minced
  • 2 scallions, minced
  • Juice of 1/2 lemon
  • Juice of 1 lime
  • 2 TBSP wine vinegar
  • 1 tsp tarragon
  • 1 tsp basil
  • 1/4 to 1/2 tsp cumin
  • 1/4 cup freshly minced parsley
  • 2 to 3 TBSP extra virgin olive oil
  • Salt
  • Black pepper
  • Cayenne to taste
  • 2 cups fresh tomatoes, diced

Instructions

Combine all ingredients.   It is optional: puree some of the soup or all of it. Chill until very cold and enjoy.
