Mache with Beets and Walnuts

Ingredients

  • 2-3 beets, skin on
  • 2 tsp caraway seeds
  • 5 TBSP walnut oil or any other high quality interesting oil (like pumpkin seed)
  • 2 TBSP balsamic vinegar
  • Salt/pepper
  • Mache or any other greens washed and trimmed
  • Walnuts

Instructions

Another Beet Recipe . . . because beets are sooooo good for you 😉

Boil or bake the beets.  To boil, place beets and caraway seeds in water and boil for 30-40 minutes.  Or bake approximately 1 hour at 350 degrees. When cool enough to handle, slip of skins and cube.

Mix together oil, vinegar, salt, and pepper pour over the beet mixture and let marinate for half an hour.

Arrange the greens on a large bowl or plate, add the marinated beets and walnuts. Toss gently and drizzle the remaining vinaigrette over it.
