Ingredients
- 1 to 2 kohlrabi with leaves
- 1-2 TBSP butter
- 1 TBSP dijon mustard or other mustard
- 1/2 tsp salt
Instructions
Slice off the root ends and vine-like stems from kohlrabi. Cut off the outer tough layer, I place it flat on the root end I just cut off, then slice down the sides remover the outer layer.. Cut into 1/4 inch slices or cubes. Pull the leaves off of the stems, roll them up together and slice them thinly.
Melt butter over medium heat in a skillet, add kohlrabi and sauté for about 5 minutes. Add the leaves and cook for another 5-10 minutes or until the kohlrabi is golden brown. The leaves are my favorite part, many people discard them!
Stir in mustard, and salt.
