Summertime Rice (from Anth – he titled it ‘A Mom Recipe’)

Ingredients

  • 1 cup of rice
  • 2 cups of coconut milk
  • 1/2 container of crème fraiche
  • 1 bunch of cilantro, chopped
  • A little coconut oil
  • Salt and pepper to taste
  • Chopped red chili pepper (optional for heat)
  • Cubes of goat cheese

Instructions

Cook one cup of rice in two cups of coconut milk.

Combine one half container of crème fraiche with one bunch of chopped cilantro and a little coconut oil. Mix well. Season with salt and pepper to taste. Add a chopped red chile pepper for a little heat. Fold in cubes of goat cheese for texture.

Notes:

I think this would be good served with some lightly sautéed greens.
