Ingredients

  • 1/2 cup cooked sweet potato, winter squash, or bananas
  • 1 large egg or 2 small pastured eggs
  • 2 TBSP hemp seeds, flax seeds, or nut butter
  • Coconut oil

Instructions

Combine above ingredients (except coconut oil) in a blender or nutri-bullet type of blender, blend  until smooth. Melt the coconut oil in a skillet and dollop silver dollar sized batter onto heated, oiled skillet. Cook over medium heat until bubbles form, flip and cook other side — they cook fast.

Enjoy. I like to put the pancakes over some greens and top with eggs. They are also delicious with a little maple syrup eaten old fashioned pancake way
