Ingredients
- 1 TBSP ghee
- 1⁄2 tsp cumin
- 1⁄2 tsp mustard seeds
- 1⁄2 inch fresh ginger, julienned
- 4 cups of filtered water
- 1 cup of amaranth
- 1⁄2 tsp sea salt
- 1 TBSP raw unsalted butter or ghee
- 1⁄2 tsp apple cider vinegar or lemon
- 1 tsp dry turmeric
- A handful of raw pumpkin seeds
Instructions
Use a heavy-bottom pan. Melt the ghee and when hot, add cumin, mustard seeds and ginger.
When mustard seeds start popping, add water, amaranth and salt.
Bring to boil, then put on low- medium heat and cook covered for 25-30 minutes or until creamy and thick.
Remove from the stove and add butter (or ghee), vinegar and turmeric. Sprinkle with pumpkin seeds.
Time to prepare: 15 minutes Time to cook: 30 minutes. Serves: 2
